Dragon's Milk White Syrup
Fresh Lemon Juice
Fresh Egg White (pasteurized if you prefer)
Dragon's Milk White Simple Syrup
Combine 1.5 cups of white sugar with 2 cups Dragon’s Milk White in a medium sauce pan. Heat gently (do not boil) until mixture has reduced by 1/3-1/2. Cool before using.
Combine all ingredients in shaker without ice, and shake to incorporate egg white.
Add ice to shaker, shake for 45 seconds or until shaker is cold.
Double strain using a small fine mesh strainer into a chilled coupe glass and enjoy.
